Pokeberry Magenta

Crush ripe pokeberries through cloth and stir in a little vinegar and salt.

  • Fresh juice is shocking magenta-pink.
  • Vinegar locks the color in; salt keeps it from spoiling.
  • The plant is poisonous — wear gloves and don't eat the berries.

Steps

    Mash berries through a fine sieve to extract juice.

    Stir in vinegar (brightens color) and salt (preservative).

    Strain again through cloth for a clean, bright ink.
