Beet Crimson

Brilliant crimson straight from a roasted root.

Color
Vivid magenta-red, fading to dusky pink
Binder
Gum arabic + honey

Simmer grated beets, reduce the red liquid to a syrup, and bind it.

  • Betalain pigments give beets that intense crimson.
  • Salt and vinegar slow the inevitable fade.
  • Looks like cochineal at first — without the bugs.

Steps

  1. 01

Simmer grated beets 20 minutes; the water turns blood-red.

  2. 02

Strain and reduce to a thick syrup on low heat.

  3. 03

Stir in salt and vinegar to preserve.

  4. 04

Mix in gum arabic and honey; pan up.

Notes

Stunning fresh, but fades over weeks. Treat it like a flower — short-lived and worth it.
